Purely for Vegetarian, Pickled Tea Leaf Salad is the traditional food of Myanmar. To get optimal flavor, all pickled tea leaves are grown in mountain region of Myanmar and hand-pick when the tea leaves are young. Widely known as Laphet in Burmese language, getting the final product involve 2 steps : Pre-fermentation and Fermentation.
Pre-fermentation starts by steaming the young tea leaves for about 5 to 10 minutes and removing the remaining water. After the process, the caretaker select the young tea leaves again and put them in the big clay pots. Then Fermentation Process can be performed with pressing selected young tea leaves by heavy weight. It has to be checked at regular intervals in the spans of 3 to 4 months. During such time interval, if the caretaker use the correct method, the pulp of young tea leaves will change from green to golden green color, the texture of young tea leaves will become soften and acidity will be reduced. After approximately 4 months, unique flavor will be formed and Your Laphet aka Tea Leaf salad is ready to be consumed.
To get the traditional style, you can garnish with diced tomato and cloves of garlic with the side of Assorted Nut fries. For our Boujee friends, Dried shrimps are a must. Always use Peanut Oil to get superior flavor. Simply put some oil on your Pickled Tea Leaf and enjoy your delicious Burmese Authentic Snack.
