Shiratamako () is a special type of glutinous rice flour that takes mochigome sweet rice and processes through washing, soaking, and grinding in water. The liquid is then pressed, dried and crushed turning into coarse granules. Mochi made with Shiratamako has a smoother, more elastic texture.
