This spelt is grown and malted in Ohio, USA. Spelt is an ancient form of wheat that adds a unique character to any beer. Commonly used in saisons, but can be used in any recipe that uses wheat. Higher levels of protein means great head retention and a lot of leftover protein for Brettanomyces to work on in aged sour beers.
