HOW TO PREPARE CORN FLOUR-BLUEBERRY PANCAKES

In a medium bowl, combine corn flour, baking powder, sugar, salt, and cinnamon. To your dry ingredients, add milk, eggs, coconut oil, and vanilla. Whisk until your batter is smooth. Add blueberries. If batter is too thick, add more milk, if too thick - add more corn flour. On medium flame, heat a large pan or griddle. Spray with a cooking spray. Take 1/4 measuring cup, pour batter on skillet. Make sure you leave space between your pancakes. Cook for 1-2 mins on both sides. Serve hot with your favorite toppings. Enjoy!
